575 ml cake flour
50 ml cocoa
1/2 cup sugar
250 gms butter
200 gms dark chocolate, broken into squares and melted
Walnuts or glace cherries, as desired
For the filling:
4 extra-large eggs
500 ml soft brown sugar
5 tbsp cake flour
2 tsp baking powder
Salt, a pinch
300 ml chopped walnuts
150 ml glaced cherries
1 cup coconut powder
Method
- Preheat the oven to 180'C and spray a shallow 25x25 cm oven-proof tray with non-stick spray. Sift Flour and cocoa together and add sugar. Rub in butter and knead to form a dough. press it to the bottom of the tray and bake for 15 minutes.
- To make the filling, beat eggs and sugar until thick. Sift dry ingredients, nuts, cherry and coconut into the egg mixture. Spoon the mixture over the hot crust and bake again for 30 minutes.
- Remove and let it cool. Spread chocolate and garnish with nuts and cherries and leave it to cool. use a hot knife to cutinto squares.
I don't consider this recipe as a cake obviously; Im not sure yet on which category do I have to keep this.
