1 kg ripe tomatoes
2 medium sized cucumbers
1 green pepper, seeded and sliced
1 medium red onion, finely chopped
3 tbsp olive oil
2 cloves garlic
A handful stale with bread, crusts removed
3 tbsp good quality redwine or tarragon vinegar
Sea salt and crushed black pepper
A handful toasted almonds or sesame seeds, for decoration
Method
- Crush the garlic in a mortar with a good pinch of salt and a little of the oil until you get a thick paste. Puree vegetables and bread in a blender until smooth, then add garlic paste, rest of the oil, vinegar, salt and black pepper.
- Put in the fridge for atleast two hours, to chill. Decorate with toasted almonds or sesame seeds and an ice cube in the middle of each serving dish.
Gazpacho means - a soup made with chopped tomatoes and onions and cucumbers and peppers and herbs; served cold.
