Chilled Tomato and Saffron Consomme

Ingredients:
500 gms ripe tomatoes
1 gm saffron
3 gms fresh basil
1 gm salt 1 gm white pepper powder

Method:
Blend tomato and basil leaves together. Strain the mixture through a muslin cloth and collect the clear juice.
Dissolve saffron in water and mix it with clear juice. Season with salt and pepper powder. Serve it in a soup cup, garnish with basil leaves.
Tip:
Bail leaves can be substituted with any fresh herb of your choice. Boiled and finely-chopped vegetables can be added for that extra bite.
