Tuna Chilli Tacos

Ingredients:
8 taco shells
400 gms red kidney beans
25 gms cheese
1 tsp chopped mint
1/2 tsp chilli sauce
2 spring onions chopped
1/2 bunch small crisp lettuce, shredded
425 gms tinned tuna fish chunks
50 gms Cheddar cheese, grated
8 cherry tomatoes
Method:
Warm taco shells in hot oven for a minute until crisp. mash the beans lightlt with a fork and mix in cheese, chilli sauce, onion and mint. Fill each taco shell with lettuce, bean mixture and tuna. top with Cheddar cheese and tomato. Serve immediately.
Serves 4.
