Chilled Caribbean Tender Coconut

Ingredients:
1 tender coconut, scoop out the flesh
300 gms watermelon, deseeded and cut into chunks
20 ml honey
50 gms mint leaves
50 ml grapefruit juice
100 ml tender coconut water
10 ml ginger juice

Method:
Mix together all the ingredients, except mint, and chill. Garnish with mint and serve.
